Ginger Spiced Apple Cake

What’s not to love? It’s ginger. It’s apple. It’s delicious! There’s nothing like a warm flavorful bread baking in the oven – whether that’s during the frigid days of winter – or during any other season – apples always make a great addition to any sweet treat. The gingerbread spice and brown sugar make this Ginger Spiced Apple Bread especially popular for the holidays.

Prep: 15 minutes Bake: 1 hour and 15 minutes

Total: Approx. 1.5 hour

Yields: 6-8 servings

Ginger Spice Apple Cake Top

Ingredients

  • 2 1/4 cup all purpose flour
  • 1 1/4 cup brown sugar
  • 4 eggs
  • Zest of one orange
  • 3 tsp gingerbread spice mix 
  • 1 cup oil
  • 1 Tbsp honey
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/3 cup dried cranberries (optional)
  • 1/3 cup rolled oats 
  • 4 apples

This recipe was developed specifically for use with our Bread Loaf Pan.

Directions

  1. Preheat the oven to 350F and line your Emerson Creek Pottery Bread Loaf Pan with parchment paper. 
  2. Peel, core and dice the apples.
  3. In a medium bowl, add eggs, brown sugar and orange zest and beat for about 5-8 minutes. 
  4. Slowly add oil and beat. Then, add honey and beat again. 
  5. In a separate bowl, add flour, baking powder, baking soda and gingerbread spice mix.
  6. Using a spatula, gently mix and combine wet and dry ingredients.
  7. Add oats, dried cranberries and half of the diced apples. Stir until combined. 
  8. Transfer to a baking pan and bake for approximately 1 hour and 15 minutes or until inserted toothpick comes out clean. 
  9. Prepare the other half of diced apples: place them into a skillet with 2 Tbsp water, add 2 tsp honey, couple of orange slices, one star anise and one cinnamon stick and cook covered over medium heat stirring occasionally until the apples become soft.
  10. Remove apples from heat and use a spoon to place them on top of your ginger spiced apple cake.
  11. Slice the cake and enjoy!
