Split Pea Soup

Spring is near and this Split Pea Soup is unexpectedly perfect for this time of year. With fresh ingredients like onion, celery, and carrots, this soup has us dreaming of our garden and the harvest that’s soon to come.

The freshly squeezed lemon adds a zing to this soup that is sure to make your taste buds sing! Serve this Split Pea Soup with our easy No Knead Bread for the perfect springtime meal.

Yields: 6 servings

Split Pea Soup

Ingredients

  • 2 Tbsp Olive oil 
  • 2 medium onions (chopped)
  • 1 garlic cloves (thinly sliced)
  • 4 celery sticks (chopped)
  • 4 cups unsalted chicken or veggie broth 
  • 2-3 carrots (peeled and chopped)
  • 4 cups water
  • 1 (16 oz) bag dried split peas (rinsed)
  • Salt and pepper to taste 
  • 1 tsp ground cumin
  • Couple of bay leaves
  • Fresh parsley or thyme for garnish 
  • Fresh lemon juice to taste (added just before serving)
  • Optional: grated parmesan (for serving)

We like to serve this soup in an Emerson Creek Onion Soup Bowl.

Directions

  1. Heat olive oil in a large pot over medium-high heat. Add onion, celery and carrots and sauté 3 for minutes. Add garlic and sauté until golden. 
  2. Pour in chicken broth or veggie broth and water. Add split peas, bay leaves, thyme and all spices.
  3. Bring mixture to a boil. Then cover and let simmer, stirring occasionally until peas have mostly broken down (about 60 minutes). Serve warm garnished with parsley or grated parmesan if desired.
  4. Enjoy!
