Homemade Hummus with Sun-dried Tomatoes

Don’t you just love dipping a crunchy cracker into cool hummus on a warm summer day? This tangy dip is sure to please the palate with a mixture of chickpeas, tahini, lemon juice, and of course, sun dried tomatoes! Pair this hummus with baked pita chips, cherry tomatoes or bell peppers for dipping and you’re in for a real treat.

Prep: 10 minutes | Total: 10-15 minutes

Yields: 4 servings

Ingredients

  • 1½ cups canned chickpeas, drained and rinsed
  • â…“ cup tahini paste 
  • 1/2 cup sun-dried tomatoes from a jar 
  • 1 Tbsp extra virgin olive oil 
  • 1 Tbsp lemon juice, plus more to taste
  • 1 garlic clove 
  • ½ teaspoon salt
  • Dash of brown sugar 
  • 1 tsp paprika powder 
  • 3-5 Tbsp water, or as needed to blend
  • Pita chips, fresh herbs and/or veggies, for serving

This recipe was developed specifically for use with our Brookline Oval Trays, which come as a set of one Large Tray and one Small Tray, or, purchase your favorite size individually!

Directions

  1. In a high speed blender, place all of the ingredients and blend until smooth. Add water as needed to blend, and/or to reach your desired consistency.
  2. Transfer to a serving plate, top with desired garnishes and serve with warm pita and veggies, as desired.
