Salsa de Mango y Frijoles Negros – Salsa with Mango and Black Beans
1 can black beans – rinsed
1 can corn – rinsed
1 cup of diced mango
1/3 cup fresh cilantro, chopped
1/2 cup of red onion, chopped
1/4 cup of lemon or lime juice
1/2 cup of sweet red pepper, chopped
Mix all ingredients in a large bowl – place in refrigerator one hour prior to serving. Serve with tortilla chips or over grilled chicken. Garnish with fresh cilantro.
