Shortbread: Cookies For Every Occasion

Ginger Shortbread cookies

Today, we’d like to share our Ginger Shortbread recipe with you using our Rose Window Shortbread Pan. (Purchase yours here!) The warmth from the ginger and the rich taste of butter pair perfectly with an afternoon cup of tea. 

Our Traditional Shortbread recipe is flaky and crumbly — so delicate that it melts in your mouth. The Ginger Shortbread recipe is a little heartier and uses brown sugar instead of powdered sugar, giving it a stickiness that holds the shortbread together without compromising the crunch that makes it so delectable.

Shortbread: Cookies For Every OccasionIngredients
  • ½ cup butter at room temperature
  • ¼ cup light brown sugar, packed
  • ¾ teaspoon powdered ginger
  • 1 cup flour, unsifted
  • 1 tablespoon cornstarch
Directions

Cream the butter and brown sugar together. In a separate bowl, mix the flour, ginger, and cornstarch. Work the flour mixture into the butter mixture. Knead the dough on a floured surface until it is nice and smooth. 

Spray your shortbread pan with a non-stick cooking spray. Firmly press the dough into the pan, working from the middle out. Prick the entire surface with a fork and bake at 325 degrees for 30-35 minutes, or until lightly browned. 

Let the shortbread cool in its pan for about 10 minutes before you flip it over onto a wooden cutting board. If the shortbread doesn’t come right out, tap one edge of the pan. Cut the shortbread into serving pieces while it is still warm. 

Allow the pan to cool before washing it in the sink or dishwasher.
